Road side friend

I was out for a walk on a gravel road the other day up north. I was talking on the phone and I heard this donkey braying loudly. I look over and across the field this donkey was braying and running towards me from the other side of the pen. He heard me coming. I go over to the fence and he stuck his head out . He just wanted a little attention. 🙂

Winter morning at the beach

37 deg, damp, windy, cloudy ... Not much competition on the beach this morning, pulled into an empty parking lot too. That's the trick if you want to go to the beach and it not be overcrowded.

Thoughtful coworkers

7 of us workers got together for lunch today . The table was all beautifully  set, folded napkins and place cards for each one. We went to sit down and Sheila was next to me and half standing in front of my chair. I tried to pull it out and get in and she was in the way . She said we are going to wait until everyone gets to their chair before we sit  . Ok that's fine so then we all gather around and when it was time I pull out my chair to sit down and this is what I found....

How thoughtful right ?!? A high chair for me 😜. She found this highchair and wanted it for me so that's how come she went all out w the table setting and name cards. We all got a good laugh !!

Birthday birthday birthday

Thank you everyone for making my birthday so special !! The calls, vmail, singing songs, txts, cards, gifts , friendship , and those w me who spoiled me at home here !!    Had the tradition birthday meal for this home. Huge meatballs and pasta, I made stuffed mushrooms to accompany it. 

    Today I relaxed , read a book , had some great visits, phone calls, txt chats , good company, tasty food and a great bible study .  So far it feels good being 25 !!😜

Meet Doris

A precious gem of an older lady. 

Whose eyes can hardly see but she reaches out her hand when you walk in the room .

 She has a smile on her face and hymn humming out .

 There are friends on her mind as she sits in her room . 

She sits all alone but her life is so full . From her bed she remembers others she knows , asks about the sick and tells you safe travels on the road. 

She offers you crackers and gives you so much more, An uplifted spirit and encouragement to go.

 She gives a hymn 112 " I hear the voice of Jesus", we sing it together then she asks ,"any more?". We sing some more then say goodbye. 

Coconuts ... Lesson 101

I have been learning a little more about coconuts this week . 

When the coconut falls to the ground and dries the seed will start growing and produce another tree.

Amazes me the power in a  seed. 

I learned about coconut jelly . It's when the coconut isn't as ripe, before it gets hard. There is more water inside and less meat. The meat(white coconut ) is soft like jelly . Scrape it put and eat it. That was my dessert tonight ! Plus the coconut water we got w supper. 

It's cut like that to pour out the water . 

Not to much jelly but scrape it out w a spoon and enjoy ! I love coconut 😃

If it ripens longer there will be less water but it will be sweeter and the coconut inside you have to cut and break into pieces which is more commonly used. 

Jan 1st...

Happy New Year!! 2016 here we come can hardly believe 2015 is over. And you know what else Jan 1st is? My 4th year in the work. My worker anniversary , a joyous day for me. Happy way to think about starting a new year. Been such good 4 years... So diff and much better than I ever thought and also more struggles than I ever thought. But isn't that life serving God?  God has kept tho and it's the best life ever!! So many others to help hold my hands up along the way too. 

     Today our day consisted of starting off in a  Trinidading home. Great fellowship, laughter and food. 

Lots of garlic & ginger they used. 

Fried Plantains ... Which I love! Shrimp , fish, rice & lentils. Use ham bone to flavor rice & lentils .

Then we came to a Jamaican family for supper. 

Fresh sweet corn picked yesterday ... Boiled w Ham bone, curry chicken, beef foot(my first time ), squash, sweet & regular potato , 2 other root veggies, salad, beans and carrot, Apple ginger drink . 

More good fellowship and warm welcome , taught this sweet smart gal to knit! She's a quick learner  , fun to see her enjoy it! 

That's my New Year's Day, off to a good start for a good year.  Hope yours was also !!😀🎊
